Mango Bread
This delicious mango bread is moist, flavorful, and perfect for breakfast or as a snack.
Ingredients - Serves 12
- Chopped nuts (optional) - 1/2 cup
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Vegetable oil - 1/2 cup
- Granulated sugar - 1 cup
- Ripe mangoes - 2 cups, peeled and diced
- Ground cinnamon - 1 teaspoon
- Salt - 1/4 teaspoon
- Baking soda - 1/2 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, mash the diced mangoes with a fork or potato masher.
- Add the sugar, oil, eggs, and vanilla extract to the mashed mangoes. Stir until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
- Fold in the chopped nuts, if using.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let the bread cool in the pan for 10 minutes.
- Transfer the bread to a wire rack to cool completely before slicing and serving.
