Let's Get Started

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In a separate bowl, mash the diced mangoes with a fork or potato masher.
  4. Add the sugar, oil, eggs, and vanilla extract to the mashed mangoes. Stir until well combined.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chopped nuts, if using.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the bread cool in the pan for 10 minutes.
  10. Transfer the bread to a wire rack to cool completely before slicing and serving.
