Let's Get Started

  1. Line an 8x8-inch baking dish with parchment paper.
  2. In a large saucepan, combine the sugar, cocoa powder, evaporated milk, and butter.
  3. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
  4. Continue cooking, stirring constantly, for 7-8 minutes or until the mixture reaches the soft ball stage (235°F on a candy thermometer).
  5. Remove from heat and stir in the vanilla extract and chopped nuts (if using).
  6. Pour the mixture into the prepared baking dish and spread it evenly.
  7. Let it cool at room temperature for about 2 hours, or until set.
  8. Once set, lift the fudge out of the baking dish using the parchment paper and cut into squares.
  9. Store in an airtight container at room temperature.
