Ingredients - Serves 12
- Chopped nuts (optional) - 1/2 cup
- Vanilla extract - 1 teaspoon
- Unsalted butter - 1/2 cup
- Evaporated milk - 1 can (12 oz)
- Unsweetened cocoa powder - 3/4 cup
- Granulated sugar - 2 cups
Let's Get Started
- Line an 8x8-inch baking dish with parchment paper.
- In a large saucepan, combine the sugar, cocoa powder, evaporated milk, and butter.
- Cook over medium heat, stirring constantly, until the mixture comes to a boil.
- Continue cooking, stirring constantly, for 7-8 minutes or until the mixture reaches the soft ball stage (235°F on a candy thermometer).
- Remove from heat and stir in the vanilla extract and chopped nuts (if using).
- Pour the mixture into the prepared baking dish and spread it evenly.
- Let it cool at room temperature for about 2 hours, or until set.
- Once set, lift the fudge out of the baking dish using the parchment paper and cut into squares.
- Store in an airtight container at room temperature.
