Mandilli de Saea
Mandilli de Saea is a traditional Ligurian pasta dish, also known as Silk Handkerchiefs. It's served with a creamy, rich pesto sauce.
Ingredients - Serves 4
- Olive oil - 1/2 cup
- Parmesan cheese - 1 cup, grated
- Pine nuts - 1/4 cup
- Garlic cloves - 2, minced
- Basil leaves - 2 cups
- Salt - 1 teaspoon
- Eggs - 4 large
- Flour - 2 cups
Let's Get Started
- In a large bowl, combine the flour, eggs, and salt. Knead until a smooth dough forms. Let it rest for 30 minutes.
- Roll out the dough as thin as possible, then cut it into square shapes.
- In a food processor, combine the basil, garlic, pine nuts, and Parmesan. While the processor is running, slowly add the olive oil until a smooth pesto sauce forms.
- Cook the pasta in boiling salted water for 2-3 minutes, or until al dente.
- Drain the pasta, reserving some of the pasta water.
- Toss the pasta with the pesto sauce, adding pasta water as needed to thin the sauce.
- Serve the pasta with extra Parmesan cheese on top.
