Mamona
Mamona, also known as Sudanese grilled meat, is a popular dish in Sudan. It is typically made with lamb or beef that is marinated in a mixture of spices and then grilled to perfection.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Lemon juice - 2 tablespoons
- Garlic - 4 cloves, minced
- Lamb or beef - 1 kg
Let's Get Started
- In a large bowl, combine the minced garlic, lemon juice, ground coriander, ground cumin, salt, black pepper, and olive oil.
- Add the meat to the bowl and mix well to ensure that it is fully coated in the marinade. Cover the bowl and leave it in the fridge for at least 2 hours, or overnight if possible.
- Preheat your grill to medium heat.
- Remove the meat from the marinade and place it on the grill. Cook for about 30 minutes, turning occasionally, until the meat is cooked to your desired level of doneness.
- Remove the meat from the grill and let it rest for a few minutes before serving.
