Malai Kofta
Malai Kofta is a popular North Indian dish consisting of paneer and potato balls in a rich, creamy sauce.
Ingredients - Serves 4
- Cumin seeds - 1 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chilli powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Cream - 1/2 cup
- Tomato puree - 1 cup
- Ginger-garlic paste - 1 tablespoon
- Onions - 2 medium, finely chopped
- Oil - For deep frying
- Salt - To taste
- Cornflour - 2 tablespoons
- Green chillies - 2, finely chopped
- Potatoes - 2 large, boiled and mashed
- Paneer - 200 grams, grated
Let's Get Started
- In a bowl, mix together the grated paneer, mashed potatoes, green chillies, cornflour, and salt. Shape into balls and set aside.
- Heat oil in a pan and deep fry the balls until golden brown. Drain on paper towels and set aside.
- In the same oil, add the cumin seeds and let them splutter. Then add the chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and sauté for a few more minutes. Then add the tomato puree, red chilli powder, turmeric powder, coriander powder, and salt. Cook until the oil separates from the masala.
- Add the cream and garam masala to the masala and mix well. Cook for a few more minutes.
- Add the fried balls to the gravy and simmer for a few minutes until the balls absorb the gravy.
- Serve hot garnished with fresh coriander leaves.
