Madras Curry
This flavorful Madras curry is a spicy and aromatic dish that originates from South India.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Salt - To taste
- Chicken or vegetables - 500g, diced
- Coconut milk - 1 can (400ml)
- Tomatoes - 2, chopped
- Madras curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Vegetable oil - 2 tablespoons
Let's Get Started
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Stir in the Madras curry powder and cook for 1 minute to toast the spices.
- Add the chopped tomatoes and cook for 5 minutes, until they start to break down.
- Pour in the coconut milk and bring to a simmer.
- Add the diced chicken or vegetables to the pan and season with salt.
- Cover and simmer for 15-20 minutes, or until the chicken is cooked through or the vegetables are tender.
- Garnish with fresh cilantro and serve hot with steamed rice or naan bread.
