Madeleines
These classic French madeleines are delicate and buttery, with a hint of lemon zest.
Ingredients - Serves 12
- Powdered sugar - For dusting
- Salt - 1/4 teaspoon
- Lemon zest - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Granulated sugar - 1/2 cup
- All-purpose flour - 1 cup
- Unsalted butter - 1/2 cup (1 stick), melted
Let's Get Started
- Preheat the oven to 375°F (190°C). Grease and flour a madeleine pan.
- In a mixing bowl, whisk together the flour and granulated sugar.
- In a separate bowl, beat the eggs until frothy. Add the melted butter, vanilla extract, lemon zest, and salt. Mix well.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers spring back when lightly touched.
- Remove from the oven and let the madeleines cool in the pan for a few minutes.
- Gently remove the madeleines from the pan and transfer them to a wire rack to cool completely.
- Dust with powdered sugar before serving.
