Ma Po Tofu
A classic Sichuan dish that combines tofu, minced pork, and a spicy sauce.
Ingredients - Serves 4
- Green onions - 2, chopped
- Cornstarch - 1 tablespoon, mixed with 2 tablespoons water
- Chicken stock - 1/2 cup
- Soy sauce - 2 tablespoons
- Doubanjiang - 2 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Sichuan peppercorns - 1 teaspoon, ground
- Minced pork - 200 grams
- Tofu - 1 block, cubed
Let's Get Started
- Heat a wok over medium heat and add the ground Sichuan peppercorns. Toast until fragrant, then remove and set aside.
- In the same wok, add the minced pork and cook until browned.
- Add the garlic, ginger, and doubanjiang to the wok and stir-fry until fragrant.
- Add the tofu, soy sauce, and chicken stock to the wok. Simmer for 10 minutes.
- Stir in the cornstarch mixture and cook until the sauce has thickened.
- Sprinkle the toasted Sichuan peppercorns and chopped green onions over the top before serving.
