Ingredients - Serves 4
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Corn - 1 cup
- Black beans - 1 can, drained and rinsed
- Chicken broth - 1 cup
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Tomatoes - 2, diced
- Bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Olive oil - 2 tablespoons
- Chicken breasts - 4
Let's Get Started
- Season the chicken breasts with salt, pepper, paprika, and cumin.
- Heat olive oil in a large skillet over medium heat.
- Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the diced onion, minced garlic, and diced bell pepper. Cook until the vegetables are softened, about 5 minutes.
