Loubia
Loubia is a traditional Moroccan white bean stew, cooked with tomatoes, garlic, and spices. It's a hearty and comforting dish that's perfect for a cold day.
Ingredients - Serves 4
- Parsley - A handful, chopped
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Tomatoes - 2 large, chopped
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- White beans - 2 cups, soaked overnight
Let's Get Started
- Rinse the soaked beans and place them in a large pot. Cover with water and bring to a boil.
- Reduce the heat to low, cover the pot, and let the beans simmer for about 30 minutes, or until they are tender.
- In a separate pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
- Add the tomatoes, paprika, cumin, salt, and pepper to the pan. Cook for a few minutes, until the tomatoes are soft.
- Add the tomato mixture to the pot with the beans. Stir well to combine.
- Cover the pot and let the stew simmer for another 30 minutes, stirring occasionally.
- Adjust the seasoning if necessary, and stir in the chopped parsley just before serving.
