Let's Get Started

  1. Rinse the soaked beans and place them in a large pot. Cover with water and bring to a boil.
  2. Reduce the heat to low, cover the pot, and let the beans simmer for about 30 minutes, or until they are tender.
  3. In a separate pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until the onion is translucent.
  4. Add the tomatoes, paprika, cumin, salt, and pepper to the pan. Cook for a few minutes, until the tomatoes are soft.
  5. Add the tomato mixture to the pot with the beans. Stir well to combine.
  6. Cover the pot and let the stew simmer for another 30 minutes, stirring occasionally.
  7. Adjust the seasoning if necessary, and stir in the chopped parsley just before serving.
