  1. Bring a pot of water to a boil. Add the lotus root and carrot slices and blanch for 2-3 minutes. Drain and rinse under cold water.
  2. In a large bowl, combine the rice vinegar, soy sauce, sesame oil, and sugar. Stir until the sugar is dissolved.
