Lotus Root Salad
A refreshing and crunchy salad made with lotus root, carrots, and a tangy dressing.
Ingredients - Serves 4
- Green onions - 2, thinly sliced
- Sesame seeds - 1 tablespoon
- Sugar - 1 teaspoon
- Sesame oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Rice vinegar - 2 tablespoons
- Carrot - 1 large, peeled and thinly sliced
- Lotus root - 1 large, peeled and thinly sliced
Let's Get Started
- Bring a pot of water to a boil. Add the lotus root and carrot slices and blanch for 2-3 minutes. Drain and rinse under cold water.
- In a large bowl, combine the rice vinegar, soy sauce, sesame oil, and sugar. Stir until the sugar is dissolved.
- Add the blanched lotus root and carrot slices to the bowl and toss to coat in the dressing.
- Sprinkle with sesame seeds and green onions before serving.
