Locro
Locro is a traditional South American stew made with corn, potatoes, and meat.
Ingredients - Serves 6
- Queso fresco - 1/2 cup, crumbled
- Scallions - 2, chopped
- Fresh cilantro - 1/4 cup, chopped
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Butternut squash - 1 small, peeled and diced
- Potatoes - 3 large, peeled and diced
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Pork shoulder - 1 pound, cubed
- Water - 4 cups
- Dried white corn kernels - 1 cup
Let's Get Started
- In a large pot, soak the dried corn kernels in water overnight.
- Drain the soaked corn kernels and return them to the pot.
- Add the cubed pork shoulder, chopped onion, minced garlic, cumin, paprika, salt, and pepper to the pot.
- Cover with water and bring to a boil. Reduce the heat and simmer for 30 minutes.
- Add the diced potatoes and butternut squash to the pot. Simmer for an additional 20 minutes, or until the vegetables are tender.
- Using a potato masher or the back of a spoon, mash some of the potatoes and squash to thicken the stew.
- Stir in the chopped cilantro and scallions. Cook for another 5 minutes.
- Serve hot, garnished with crumbled queso fresco.
