Pork Torta
A delicious Mexican sandwich filled with juicy pork, refried beans, avocado, and pickled jalapenos.
Ingredients - Serves 4
- Queso fresco - 1/2 cup, crumbled
- Pickled jalapenos - 1/4 cup
- Avocado - 1, sliced
- Bolillo rolls - 4
- Refried beans - 1 can
- Oregano - 1 teaspoon
- Cumin - 1 teaspoon
- Onion - 1, chopped
- Garlic - 2 cloves, minced
- Pork shoulder - 1 pound
Let's Get Started
- Preheat the oven to 325°F.
- Season the pork shoulder with the garlic, onion, cumin, and oregano.
- Place the pork in a baking dish and cover with foil. Bake for 2 hours, or until the pork is tender and can be easily shredded with a fork.
- Remove the pork from the oven and let it rest for a few minutes. Then, shred the pork using two forks.
- Spread the refried beans on the bottom half of each bolillo roll.
- Top the beans with the shredded pork, avocado slices, pickled jalapenos, and crumbled queso fresco.
- Place the top half of the bolillo roll on top of the fillings. Serve the tortas warm.
