Loaded Mashed Potato Casserole
This loaded mashed potato casserole is a comforting side dish that's packed with flavors of bacon, cheese, and green onions.
Ingredients - Serves 8
- Green onions - 1/2 cup, chopped
- Cheddar cheese - 2 cups, shredded
- Bacon - 8 slices, cooked and crumbled
- Salt and pepper - To taste
- Sour cream - 1 cup
- Butter - 1/2 cup
- Milk - 1/2 cup
- Potatoes - 8 medium, peeled and cubed
Let's Get Started
- Preheat your oven to 350°F and lightly grease a 9x13 inch baking dish.
- Place the potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 minutes. Drain and return to the pot.
- Add the milk, butter, sour cream, salt, and pepper to the pot. Mash until smooth.
- Fold in half of the bacon, half of the cheese, and the green onions.
- Spread the potato mixture into the prepared baking dish. Top with the remaining bacon and cheese.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly.
- Serve hot, garnished with additional green onions if desired.
