This Little Italy Pasta is a delicious and hearty dish inspired by the flavors of Italian cuisine.
Ingredients - Serves 4
- Fresh basil - 1/4 cup, chopped
- Parmesan cheese - 1/2 cup, grated
- Salt and pepper - To taste
- Dried basil - 1 teaspoon
- Dried oregano - 1 teaspoon
- Tomato paste - 2 tablespoons
- Crushed tomatoes - 1 can (28 ounces)
- Mushrooms - 8 ounces, sliced
- Bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Onion - 1 medium, diced
- Italian sausage - 1 pound, casings removed
- Penne pasta - 8 ounces
Let's Get Started
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, cook the Italian sausage over medium heat until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the diced onion, minced garlic, diced bell pepper, and sliced mushrooms. Cook until the vegetables are tender.
- Add the crushed tomatoes, tomato paste, dried oregano, dried basil, salt, and pepper to the skillet. Stir to combine.
- Return the cooked Italian sausage to the skillet and simmer for 10 minutes.
- Add the cooked penne pasta to the skillet and toss to coat with the sauce.
- Serve the Little Italy Pasta hot, garnished with grated Parmesan cheese and chopped fresh basil.
