Herbed Lentil Burgers
These delicious and healthy lentil burgers are packed with protein and fiber. The fresh herbs add a burst of flavor that makes these burgers anything but ordinary.
Ingredients - Serves 4
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Fresh basil - 1/4 cup, chopped
- Fresh parsley - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Egg - 1
- Breadcrumbs - 1/2 cup
- Water - 2 cups
- Green lentils - 1 cup
Let's Get Started
- Rinse the lentils and place them in a pot with the water. Bring to a boil, then reduce the heat and simmer until the lentils are tender, about 20 minutes.
- Drain the lentils and let them cool.
- In a large bowl, combine the cooled lentils, breadcrumbs, egg, garlic, parsley, basil, salt, and pepper. Mix until well combined.
- Form the mixture into four patties.
- Heat the olive oil in a pan over medium heat. Add the patties and cook until they are golden brown on both sides, about 5 minutes per side.
- Serve the burgers on buns with your favorite toppings.
