Ragu Toscano
Ragu Toscano is a traditional Tuscan meat sauce that is typically served with pasta. It's a hearty and flavorful dish that is perfect for a family dinner.
Ingredients - Serves 6
- Fresh basil - A handful, chopped
- Bay leaves - 2
- Salt and pepper - To taste
- Canned tomatoes - 1 can (400 grams)
- Tomato paste - 2 tablespoons
- Red wine - 1 cup
- Ground pork - 500 grams
- Ground beef - 500 grams
- Garlic cloves - 2, minced
- Celery stalks - 2, finely chopped
- Carrots - 2, finely chopped
- Onions - 2, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions, carrots, celery, and garlic and cook until the vegetables are soft, about 10 minutes.
- Add the ground beef and pork and cook until browned.
- Add the red wine and cook until it has reduced by half.
- Stir in the tomato paste, canned tomatoes, salt, pepper, bay leaves, and half of the chopped basil.
- Reduce the heat to low, cover the pot, and simmer for at least 2 hours, stirring occasionally.
- Before serving, remove the bay leaves and stir in the remaining chopped basil.
- Serve the ragu over cooked pasta and garnish with grated Parmesan cheese.
