  2. Form the mixture into four large meatballs.
  3. Heat the vegetable oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 10 minutes.
  4. Add the chicken broth to the skillet and bring to a simmer. Cover and cook for 30 minutes.
  5. Add the bok choy to the skillet and cook until tender, about 10 minutes.
  6. Serve the meatballs and bok choy with the broth.
