Bok Choy and Mushroom Stir Fry
A delicious and healthy stir fry made with bok choy and mushrooms.
Ingredients - Serves 2
- Green onions - 2, sliced (for garnish)
- Cooked rice - 2 cups
- Salt and pepper - To taste
- Cornstarch - 1 teaspoon
- Vegetable broth - 1/4 cup
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Mushrooms - 8 ounces, sliced
- Bok choy - 2 heads, chopped
Let's Get Started
- Heat the sesame oil in a large skillet or wok over medium heat.
- Add the garlic and ginger and cook for 1 minute, until fragrant.
- Add the mushrooms and cook for 3-4 minutes, until they start to soften.
- Add the bok choy and cook for another 2-3 minutes, until wilted.
- In a small bowl, whisk together the soy sauce, vegetable broth, and cornstarch.

- Cook for an additional 2-3 minutes, until the sauce has thickened.
- Season with salt and pepper to taste.
- Serve the stir fry over cooked rice and garnish with sliced green onions.
