Linssikeitto
Linssikeitto is a traditional Finnish lentil soup made with red lentils, vegetables, and spices. It is hearty, flavorful, and perfect for cold winter days.
Ingredients - Serves 6
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Dried thyme - 1 teaspoon
- Bay leaves - 2
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Potatoes - 2, diced
- Carrots - 2, diced
- Red lentils - 1 cup
Let's Get Started
- Rinse the red lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the diced carrots and potatoes to the pot. Cook for 5 minutes, stirring occasionally.
- Add the rinsed lentils, vegetable broth, bay leaves, dried thyme, salt, and pepper to the pot. Stir well to combine.
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the lentils and vegetables are tender.
- Remove the bay leaves from the soup and discard.
- Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
- Taste and adjust the seasoning if needed.
- Serve hot, garnished with fresh parsley.
