Linsensuppe
Linsensuppe is a hearty German lentil soup made with vegetables, bacon, and spices.
Ingredients - Serves 6
- Parsley - 2 tablespoons, chopped (for garnish)
- Salt and pepper - To taste
- Vegetable broth - 4 cups
- Thyme - 1 teaspoon
- Bay leaf - 1
- Potato - 1 large, diced
- Lentils - 1 cup, rinsed
- Garlic - 3 cloves, minced
- Celery - 2 stalks, diced
- Carrot - 2 medium, diced
- Onion - 1 large, diced
- Bacon - 4 slices, chopped
Let's Get Started
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
- Add the diced onion, carrot, celery, and minced garlic to the pot. Cook until the vegetables are softened, about 5 minutes.
- Add the rinsed lentils, diced potato, bay leaf, thyme, and vegetable broth to the pot. Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat to low and simmer for 45 minutes, or until the lentils and vegetables are tender.
- Remove the bay leaf from the soup. Use an immersion blender or a regular blender to puree about half of the soup until smooth. This will help thicken the soup while still leaving some texture.
- Return the crispy bacon to the pot and stir to combine. Cook for an additional 5 minutes to allow the flavors to meld together.
- Serve the linsensuppe hot, garnished with chopped parsley.
