Leverpastej
Leverpastej is a traditional Swedish liver pate made with pork liver, onions, and spices.
Ingredients - Serves 8
- Pickles - For serving
- Bread - Sliced, for serving
- Heavy cream - 1/4 cup
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Ground cloves - 1/4 teaspoon
- Ground ginger - 1/2 teaspoon
- Allspice - 1/2 teaspoon
- Butter - 2 tablespoons
- Onion - 1 large, finely chopped
- Pork liver - 500g
Let's Get Started
- Rinse the pork liver under cold water and pat dry with paper towels.
- In a large skillet, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the pork liver to the skillet and cook until browned on all sides, about 10 minutes.
- Transfer the liver and onions to a food processor. Add the allspice, ground ginger, ground cloves, salt, and black pepper. Process until smooth.
- Add the heavy cream to the liver mixture and process again until well combined.
- Transfer the liver paste to a serving dish and refrigerate for at least 1 hour to allow the flavors to meld.
- Serve the leverpastej on sliced bread with pickles on the side.
