  1. In a bowl, mix together the ground beef, crumbled bacon, salt, and black pepper.
  2. Divide the mixture into 8 equal portions.
  3. Take one portion and flatten it into a patty shape.
  4. Place a slice of cheddar cheese in the center of the patty.
  5. Take another portion of the beef mixture and flatten it into a patty shape.
  6. Place it on top of the cheese, and press the edges of the two patties together to seal the cheese inside.
  7. Repeat with the remaining portions of beef mixture and cheese slices.
  8. Preheat a grill or skillet over medium-high heat.
  9. Cook the stuffed burgers for about 4-5 minutes per side, or until they reach your desired level of doneness.
  10. Toast the hamburger buns on the grill or in a toaster.
  11. Assemble the burgers by placing a stuffed patty on the bottom half of each bun.
  12. Top with lettuce, tomato, onion, and pickles.
  13. Cover with the top half of the bun.
