Lentil Curry
This flavorful lentil curry is made with a blend of spices, lentils, and vegetables.
Ingredients - Serves 4
- Lime juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Salt - To taste
- Cayenne pepper - 1/4 teaspoon
- Turmeric - 1/2 teaspoon
- Cumin - 1 teaspoon
- Curry powder - 2 tablespoons
- Vegetable broth - 1 cup
- Coconut milk - 1 can (400ml)
- Tomatoes - 2, diced
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Lentils - 1 cup
Let's Get Started
- Rinse the lentils under cold water and set aside.
- Heat some oil in a large pot over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and grated ginger, and cook for another 2 minutes.
- Add the diced tomatoes, curry powder, cumin, turmeric, cayenne pepper, and salt. Stir well to combine.
- Add the rinsed lentils, coconut milk, and vegetable broth to the pot. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 20 minutes, or until the lentils are tender.
- Stir in the chopped cilantro and lime juice.
- Serve the lentil curry over steamed rice or with naan bread.
- Garnish with additional cilantro, if desired.
