Ingredients - Serves 4

Let's Get Started

  1. Rinse the lentils under cold water and set aside.
  2. Heat some oil in a large pot over medium heat.
  3. Add the chopped onion and cook until translucent, about 5 minutes.
  4. Add the minced garlic and grated ginger, and cook for another 2 minutes.
  5. Add the diced tomatoes, curry powder, cumin, turmeric, cayenne pepper, and salt. Stir well to combine.
  6. Add the rinsed lentils, coconut milk, and vegetable broth to the pot. Bring to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for about 20 minutes, or until the lentils are tender.
  8. Stir in the chopped cilantro and lime juice.
  9. Serve the lentil curry over steamed rice or with naan bread.
  10. Garnish with additional cilantro, if desired.
