Leniwe
Leniwe, also known as Polish lazy dumplings, are soft and fluffy potato dumplings served with melted butter and breadcrumbs.
Ingredients - Serves 4
- Breadcrumbs - 1/2 cup
- Butter - 4 tablespoons
- Salt - 1 teaspoon
- Egg - 1
- All-purpose flour - 2 cups
- Potatoes - 4 large, peeled and boiled
Let's Get Started
- Mash the boiled potatoes in a large bowl until smooth.
- Add the flour, egg, and salt to the mashed potatoes. Mix well until a dough forms.
- Divide the dough into small portions and roll each portion into a log shape.
- Cut the dough logs into small dumplings, about 1-inch in size.
- Bring a large pot of salted water to a boil.
- Drop the dumplings into the boiling water and cook for about 5 minutes, or until they float to the surface.
- In a separate pan, melt the butter over medium heat.
- Add the breadcrumbs to the melted butter and cook until golden brown.
- Remove the cooked dumplings from the water using a slotted spoon and transfer them to a serving dish.
- Pour the melted butter and breadcrumbs over the dumplings.
- Serve hot and enjoy!
