Let's Get Started

  1. Place the beef tongue in a large pot and cover with water. Add the salt, peppercorns, 2 cloves of garlic, and the quartered onion.
  2. Bring to a boil, then reduce the heat and simmer, covered, for about 4 hours, or until the tongue is tender.
  3. While the tongue is cooking, make the salsa verde. Place the tomatillos and jalapenos in a pot and cover with water. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  4. Drain the tomatillos and jalapenos and place in a blender. Add the remaining 2 cloves of garlic and the cilantro. Blend until smooth.
  5. Once the tongue is cooked, remove it from the pot and let it cool. Once cool, peel off the outer layer of skin and slice the tongue.
  6. Heat the olive oil in a large pan over medium heat. Add the sliced tongue and cook for a few minutes, until browned.
  7. Pour the salsa verde over the tongue and stir to coat. Cook for a few more minutes, until the salsa is heated through.
  8. Serve the lengua en salsa verde with warm tortillas and a side of rice.
