Lengua en Salsa Verde
Lengua en Salsa Verde is a traditional Mexican dish made with beef tongue in a tangy and spicy green salsa.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Cilantro - 1 bunch, chopped
- Jalapenos - 2, stemmed and seeded
- Tomatillos - 1 pound, husked and rinsed
- Onion - 1, quartered
- Garlic - 4 cloves
- Black peppercorns - 1 teaspoon
- Salt - 1 tablespoon
- Beef tongue - 1, about 3 pounds
Let's Get Started
- Place the beef tongue in a large pot and cover with water. Add the salt, peppercorns, 2 cloves of garlic, and the quartered onion.
- Bring to a boil, then reduce the heat and simmer, covered, for about 4 hours, or until the tongue is tender.
- While the tongue is cooking, make the salsa verde. Place the tomatillos and jalapenos in a pot and cover with water. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Drain the tomatillos and jalapenos and place in a blender. Add the remaining 2 cloves of garlic and the cilantro. Blend until smooth.
- Once the tongue is cooked, remove it from the pot and let it cool. Once cool, peel off the outer layer of skin and slice the tongue.
- Heat the olive oil in a large pan over medium heat. Add the sliced tongue and cook for a few minutes, until browned.
- Pour the salsa verde over the tongue and stir to coat. Cook for a few more minutes, until the salsa is heated through.
- Serve the lengua en salsa verde with warm tortillas and a side of rice.
