Ingredients - Serves 2
- Green onions - 2, sliced
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 teaspoon
- Honey - 1 tablespoon
- Lemon juice - 2 tablespoons
- Soy sauce - 2 tablespoons
- Broccoli florets - 1 cup
- Bell pepper - 1, thinly sliced
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Shrimp - 1 lb, peeled and deveined
Let's Get Started
- In a small bowl, whisk together soy sauce, lemon juice, honey, and cornstarch. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
- Add shrimp to the skillet and cook for 2-3 minutes until pink and cooked through. Remove shrimp from the skillet and set aside.
- In the same skillet, add bell pepper and broccoli florets. Stir fry for 3-4 minutes until vegetables are crisp-tender.
- Return the cooked shrimp to the skillet and pour the sauce mixture over the shrimp and vegetables.
- Cook for an additional 2 minutes, stirring constantly, until the sauce thickens and coats the shrimp and vegetables.
- Season with salt and pepper to taste.
- Garnish with sliced green onions and serve hot over steamed rice or noodles.
