Lemon Shrimp Stir Fry

  1. In a small bowl, whisk together soy sauce, lemon juice, honey, and cornstarch. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
  4. Add shrimp to the skillet and cook for 2-3 minutes until pink and cooked through. Remove shrimp from the skillet and set aside.
  5. In the same skillet, add bell pepper and broccoli florets. Stir fry for 3-4 minutes until vegetables are crisp-tender.
  6. Return the cooked shrimp to the skillet and pour the sauce mixture over the shrimp and vegetables.
  7. Cook for an additional 2 minutes, stirring constantly, until the sauce thickens and coats the shrimp and vegetables.
  8. Season with salt and pepper to taste.
  9. Garnish with sliced green onions and serve hot over steamed rice or noodles.
