Lemon Ginger Chicken Stir Fry

  1. In a bowl, combine the lemon juice, grated ginger, minced garlic, soy sauce, and honey. Mix well.
  2. Add the sliced chicken to the bowl and marinate for 10 minutes.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add the marinated chicken and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
  5. In the same skillet, add the broccoli florets, julienned carrot, and sliced bell pepper. Stir fry for 3-4 minutes, or until the vegetables are crisp-tender.
  6. Return the cooked chicken to the skillet and pour in the remaining marinade. Stir fry for an additional 2-3 minutes, or until everything is well coated and heated through.
