Lemon Ginger Chicken Stir Fry
This flavorful stir fry combines tender chicken, zesty lemon, and aromatic ginger for a delicious and healthy meal.
Ingredients - Serves 4
- Cooked rice - 4 cups, for serving
- Salt and pepper - To taste
- Green onions - 4, sliced
- Bell pepper - 1, sliced
- Carrot - 1, julienned
- Broccoli florets - 2 cups
- Vegetable oil - 2 tablespoons
- Honey - 2 tablespoons
- Soy sauce - 3 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 2 tablespoons, grated
- Lemon - 1, juiced
- Chicken breast - 2, boneless and skinless, sliced
Let's Get Started
- In a bowl, combine the lemon juice, grated ginger, minced garlic, soy sauce, and honey. Mix well.
- Add the sliced chicken to the bowl and marinate for 10 minutes.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the marinated chicken and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
- In the same skillet, add the broccoli florets, julienned carrot, and sliced bell pepper. Stir fry for 3-4 minutes, or until the vegetables are crisp-tender.
- Return the cooked chicken to the skillet and pour in the remaining marinade. Stir fry for an additional 2-3 minutes, or until everything is well coated and heated through.
- Season with salt and pepper to taste.
