Leitão À Bairrada
This traditional Portuguese dish is made with pork, garlic, and white wine.

- Potatoes - 4, peeled and cubed
- Tomatoes - 2, diced
- Onion - 1, diced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Bay leaves - 2
- White wine - 1 cup
- Garlic - 4 cloves, minced
- Pork loin - 2 pounds
Let's Get Started
- Preheat the oven to 350°F.
- Season the pork loin with garlic, salt, and pepper.
- Heat the olive oil in a large oven-safe pot over medium heat.
- Add the pork loin and brown on all sides, about 5 minutes.
- Add the white wine, bay leaves, onion, and tomatoes. Bring to a boil, then reduce the heat and simmer for 10 minutes.
- Add the potatoes and stir to combine.
- Cover the pot and transfer to the preheated oven.
- Bake for 1 hour, or until the pork is cooked through.
