Leche Asada
Leche Asada is a traditional Peruvian dessert made with milk, eggs, sugar, and vanilla. It is similar to a creamy caramel flan.
Ingredients - Serves 6
- Lemon zest - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Vanilla extract - 1 teaspoon
- Eggs - 4
- Sugar - 1 cup
- Milk - 2 cups
Let's Get Started
- Preheat the oven to 350°F (175°C).
- In a saucepan, heat the milk over medium heat until it starts to simmer. Remove from heat and let it cool slightly.
- In a mixing bowl, whisk together the sugar, eggs, vanilla extract, cinnamon, and lemon zest.
- Slowly pour the warm milk into the egg mixture, whisking constantly.
- Strain the mixture through a fine-mesh sieve to remove any lumps.
- Pour the mixture into individual ramekins or a baking dish.
- Place the ramekins or baking dish in a larger baking pan. Fill the larger pan with hot water, about halfway up the sides of the ramekins or dish.
- Bake for 40-45 minutes, or until the edges are set and the center is slightly jiggly.
- Remove from the oven and let it cool to room temperature.
- Refrigerate for at least 2 hours, or overnight, to allow the leche asada to set.
- Serve chilled and enjoy!
