Let's Get Started

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, heat the milk over medium heat until it starts to simmer. Remove from heat and let it cool slightly.
  3. In a mixing bowl, whisk together the sugar, eggs, vanilla extract, cinnamon, and lemon zest.
  4. Slowly pour the warm milk into the egg mixture, whisking constantly.
  5. Strain the mixture through a fine-mesh sieve to remove any lumps.
  6. Pour the mixture into individual ramekins or a baking dish.
  7. Place the ramekins or baking dish in a larger baking pan. Fill the larger pan with hot water, about halfway up the sides of the ramekins or dish.
  8. Bake for 40-45 minutes, or until the edges are set and the center is slightly jiggly.
  9. Remove from the oven and let it cool to room temperature.
  10. Refrigerate for at least 2 hours, or overnight, to allow the leche asada to set.
  11. Serve chilled and enjoy!
