Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 180°C (350°F).
  2. Make small incisions in the lamb shoulder and insert the garlic cloves and rosemary sprigs.
  3. Heat the olive oil in a large ovenproof pan over high heat. Add the lamb and brown on all sides.
  4. Add the white wine to the pan and let it evaporate.
  5. Add the potatoes to the pan and season with salt and pepper.
  6. Transfer the pan to the oven and roast for about 2 hours, or until the lamb is tender and the potatoes are golden.
  7. Let the lamb rest for a few minutes before carving. Serve with the roasted potatoes.
