Lazio Style Lamb
This traditional Italian dish from the Lazio region features succulent lamb cooked with rosemary and garlic, served with roasted potatoes.
Ingredients - Serves 4
- Salt and pepper - To taste
- Potatoes - 1 kg, peeled and quartered
- White wine - 1 cup
- Olive oil - 2 tablespoons
- Fresh rosemary sprigs - 4
- Garlic cloves - 4, peeled
- Lamb shoulder - 1.5 kg, bone in
Let's Get Started
- Preheat the oven to 180°C (350°F).
- Make small incisions in the lamb shoulder and insert the garlic cloves and rosemary sprigs.
- Heat the olive oil in a large ovenproof pan over high heat. Add the lamb and brown on all sides.
- Add the white wine to the pan and let it evaporate.
- Add the potatoes to the pan and season with salt and pepper.
- Transfer the pan to the oven and roast for about 2 hours, or until the lamb is tender and the potatoes are golden.
- Let the lamb rest for a few minutes before carving. Serve with the roasted potatoes.
