Lavender and Honey Macarons
Delicate and fragrant macarons infused with lavender and sweetened with honey.
Ingredients - Serves 12
- Purple food coloring - Few drops
- Honey - 2 tablespoons
- Lavender extract - 1 teaspoon
- Granulated sugar - 1/4 cup
- Egg whites - 3
- Powdered sugar - 1 cup
- Almond flour - 1 cup
Let's Get Started
- In a bowl, sift together the almond flour and powdered sugar.
- In a separate bowl, beat the egg whites until foamy. Gradually add the granulated sugar and continue beating until stiff peaks form.
- Fold in the sifted almond flour and powdered sugar mixture into the beaten egg whites, until well combined.
- Add the lavender extract, honey, and purple food coloring. Gently fold until the batter is smooth and evenly colored.
- Transfer the batter into a piping bag fitted with a round tip.
- Pipe small circles onto a baking sheet lined with parchment paper. Let the macarons sit at room temperature for about 30 minutes to form a skin.
- Preheat the oven to 325°F (160°C).
- Bake the macarons for 12-15 minutes, or until they are set and have formed feet.
- Remove from the oven and let them cool completely on the baking sheet.
- Once cooled, carefully remove the macarons from the parchment paper.
- Pair up the macaron shells of similar size and sandwich them together with your desired filling (e.g., lavender-infused buttercream or honey ganache).
- Store the filled macarons in an airtight container in the refrigerator for at least 24 hours to allow the flavors to meld together.
