Financiers
Financiers are a small French almond cake, flavored with beurre noisette, usually baked in a small mold. Light and moist with a crisp, eggshell-like exterior, the traditional financier also contains egg whites, flour, and powdered sugar.
Ingredients - Serves 12
- Honey - 1 tablespoon
- Egg whites - 5
- All-purpose flour - 1/2 cup
- Almond flour - 1/2 cup
- Powdered sugar - 1 1/2 cups
- Butter - 1/2 cup
Let's Get Started
- Preheat the oven to 400°F (200°C) and grease a financier mold.
- In a saucepan, melt the butter over medium heat until it turns a light brown color and gives off a nutty aroma. This is called beurre noisette. Set aside to cool.
- In a large bowl, combine the powdered sugar, almond flour, and all-purpose flour.
- In another bowl, whisk the egg whites until frothy. Add this to the flour mixture.
- Add the honey to the cooled beurre noisette, then add this mixture to the batter. Stir until just combined.
- Pour the batter into the prepared mold, filling each cavity three-quarters full.
- Bake for 12-15 minutes, or until the financiers are golden brown and a toothpick inserted into the center comes out clean.
- Let the financiers cool in the mold for 5 minutes, then transfer them to a wire rack to cool completely.
