Ingredients - Serves 8

Let's Get Started

  1. Mix the flour, yeast and salt in a large bowl. Rub in half the lard, then stir in the sugar.
  2. Make a well in the centre and pour in the warm milk. Mix together to form a soft dough, then turn out onto a floured surface and knead for 10 mins until smooth and elastic.
  3. Roll out the dough to a rectangle, about 30 x 20cm. Dot one third of the remaining lard over the top two-thirds of the dough, then sprinkle over a third of the sugar and fruit.
  4. Fold the dough into three, like a business letter, then give it a quarter-turn. Roll the dough out again and repeat the process twice more.
  5. Fold the dough into three once more, then put it into a greased 900g loaf tin. Cover with a clean tea towel and leave to rise in a warm place for 1 hr or until doubled in size.
  6. Heat oven to 190C/170C fan/gas 5. Bake the loaf for 45 mins until golden brown and the loaf sounds hollow when tapped underneath. Cool in the tin for 10 mins, then turn out onto a wire rack to cool completely.
