Bolo Rei
Bolo Rei, or King's Cake, is a traditional Portuguese cake that's often served during Christmas and New Year's. The cake is a staple dessert in Portuguese festivities.
Ingredients - Serves 12
- Powdered sugar - For dusting
- Salt - 1 pinch
- Orange zest - 1 teaspoon
- Lemon zest - 1 teaspoon
- Port wine - 50 ml
- Mixed dried fruit - 200 grams
- Milk - 150 ml
- Yeast - 25 grams
- Eggs - 2
- Butter - 100 grams
- Sugar - 150 grams
- All-purpose flour - 500 grams
Let's Get Started
- In a bowl, combine the flour and yeast. Add the sugar, salt, lemon zest, and orange zest.
- Warm the milk and melt the butter in it. Gradually add this to the flour mixture, while kneading continuously.
- Add the eggs one by one, followed by the Port wine. Continue to knead until the dough is elastic.
- Add the mixed dried fruit and knead the dough for a few more minutes.
- Cover the dough with a cloth and let it rise in a warm place for about 2 hours.
- Preheat the oven to 180°C (350°F).
- Shape the dough into a round loaf, place it on a baking sheet, and let it rise for another 30 minutes.
- Bake the cake in the preheated oven for about 45 minutes, or until it's golden brown.
- Let the cake cool, then dust it with powdered sugar before serving.
