  1. Season the rabbit pieces with salt and pepper, then coat them in mustard.
  2. In a large pot, brown the rabbit pieces on all sides, then remove them from the pot.
  3. In the same pot, sauté the onions and garlic until soft.
  4. Add the wine to the pot, scraping the bottom to deglaze.
  5. Return the rabbit to the pot, add the chicken stock, thyme, and bay leaf, then cover and simmer for 45 minutes.
  6. Remove the rabbit from the pot once more, stir in the cream, then return the rabbit to the pot and cook for an additional 15 minutes.
  7. Serve the rabbit with the creamy mustard sauce.
