Lapin À La Moutarde

Ingredients - Serves 4
- Heavy cream - 1/2 cup
- Salt and pepper - To taste
- Bay leaf - 1
- Thyme - 1 teaspoon
- Garlic - 2 cloves, minced
- Onions - 2, chopped
- Chicken stock - 2 cups
- White wine - 1 cup
- Dijon mustard - 4 tablespoons
- Rabbit - 1, cut into pieces
Let's Get Started
- Season the rabbit pieces with salt and pepper, then coat them in mustard.
- In a large pot, brown the rabbit pieces on all sides, then remove them from the pot.
- In the same pot, sauté the onions and garlic until soft.
- Add the wine to the pot, scraping the bottom to deglaze.
- Return the rabbit to the pot, add the chicken stock, thyme, and bay leaf, then cover and simmer for 45 minutes.
- Remove the rabbit from the pot once more, stir in the cream, then return the rabbit to the pot and cook for an additional 15 minutes.
- Serve the rabbit with the creamy mustard sauce.
