Lanzhou Beef Noodle Soup

Ingredients - Serves 4

Let's Get Started

  1. Place the beef shank in a large pot and cover with cold water. Bring to a boil and cook for 5 minutes. Drain and rinse the beef.
  2. Return the beef to the pot and add the daikon radish, garlic, ginger, star anise, and Sichuan peppercorns. Cover with water and bring to a boil.
  3. Reduce the heat to low and simmer for 2 hours, or until the beef is tender.
  4. Remove the beef from the pot and slice. Strain the broth and return it to the pot.
  5. Add the soy sauce and salt to the broth and bring to a simmer.
  6. Cook the noodles according to the package instructions. Drain and divide between 4 bowls.
  7. Top the noodles with the sliced beef, scallions, and cilantro. Ladle the hot broth over the top.
  8. Serve the Lanzhou Beef Noodle Soup hot.
