Lanzhou Beef Noodle Soup
A traditional Chinese dish, Lanzhou Beef Noodle Soup is a flavorful broth filled with tender beef and hand-pulled noodles.
Ingredients - Serves 4
- Cilantro - 1/4 cup, chopped
- Scallions - 2, chopped
- Salt - To taste
- Soy sauce - 2 tablespoons
- Sichuan peppercorns - 1 teaspoon
- Star anise - 2
- Ginger - 1 inch, sliced
- Garlic - 4 cloves, minced
- Daikon radish - 1, sliced
- Fresh white noodles - 1 pound
- Beef shank - 1 pound
Let's Get Started
- Place the beef shank in a large pot and cover with cold water. Bring to a boil and cook for 5 minutes. Drain and rinse the beef.
- Return the beef to the pot and add the daikon radish, garlic, ginger, star anise, and Sichuan peppercorns. Cover with water and bring to a boil.
- Reduce the heat to low and simmer for 2 hours, or until the beef is tender.
- Remove the beef from the pot and slice. Strain the broth and return it to the pot.
- Add the soy sauce and salt to the broth and bring to a simmer.
- Cook the noodles according to the package instructions. Drain and divide between 4 bowls.
- Top the noodles with the sliced beef, scallions, and cilantro. Ladle the hot broth over the top.
- Serve the Lanzhou Beef Noodle Soup hot.
