Lanttulaatikko
Lanttulaatikko is a traditional Finnish dish made with rutabaga, rice, and spices. It is often served as a side dish during holidays.
Ingredients - Serves 6
- Breadcrumbs - 1/4 cup
- Ground nutmeg - 1/4 teaspoon
- Ground ginger - 1/2 teaspoon
- Salt - 1 teaspoon
- Brown sugar - 2 tablespoons
- Butter - 2 tablespoons
- Milk - 2 cups
- Rice - 1 cup, uncooked
- Rutabaga - 1 large, peeled and cubed
Let's Get Started
- Preheat the oven to 350°F.
- Boil the cubed rutabaga in salted water until tender, about 15 minutes. Drain and set aside.
- Cook the rice according to package instructions. Set aside.
- In a large saucepan, heat the milk, butter, brown sugar, salt, ginger, and nutmeg over medium heat until the butter is melted and the mixture is hot.
- Add the cooked rutabaga and rice to the saucepan. Stir well to combine.
- Transfer the mixture to a greased baking dish and sprinkle breadcrumbs on top.
- Bake for 45-60 minutes, or until the top is golden brown and the dish is heated through.
- Serve hot as a side dish.
