Let's Get Started

  1. Preheat the oven to 350°F and grease a square cake pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour and baking powder, then gradually add to the butter mixture, alternating with the milk.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.
  7. To make the chocolate sauce, combine the cocoa powder and boiling water in a bowl, then stir in the icing sugar until smooth.
  8. Cut the cooled cake into squares and dip each one into the chocolate sauce, then roll in the shredded coconut.
  9. Place the lamingtons on a wire rack to set before serving.
