Lamingtons
Lamingtons are a classic Australian dessert made of sponge cake, chocolate sauce, and shredded coconut.
Ingredients - Serves 12
- Shredded coconut - 2 cups
- Icing sugar - 2 cups
- Boiling water - 1/2 cup
- Unsweetened cocoa powder - 1/4 cup
- Milk - 1/2 cup
- Baking powder - 1 teaspoon
- All-purpose flour - 2 cups
- Vanilla extract - 1 teaspoon
- Eggs - 2
- Sugar - 1 cup
- Butter - 1/2 cup, softened
Let's Get Started
- Preheat the oven to 350°F and grease a square cake pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine the flour and baking powder, then gradually add to the butter mixture, alternating with the milk.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely.
- To make the chocolate sauce, combine the cocoa powder and boiling water in a bowl, then stir in the icing sugar until smooth.
- Cut the cooled cake into squares and dip each one into the chocolate sauce, then roll in the shredded coconut.
- Place the lamingtons on a wire rack to set before serving.
