Lamb Rack with Rosemary Jus
A succulent rack of lamb served with a rich rosemary jus. Perfect for a special occasion or a gourmet dinner at home.
Ingredients - Serves 4
- Butter - 2 tablespoons
- Beef stock - 1 cup
- Red wine - 1 cup
- Fresh rosemary - 2 sprigs
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Rack of lamb - 1, about 2 pounds
Let's Get Started
- Preheat the oven to 400°F.
- Season the rack of lamb with salt and pepper.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the lamb and sear on all sides until browned.
- Add the garlic and rosemary to the skillet and place in the oven. Roast for 20-25 minutes, or until the lamb reaches your desired level of doneness.
- Remove the skillet from the oven and transfer the lamb to a cutting board to rest.
- Place the skillet back on the stove over medium heat. Add the red wine and scrape up any browned bits from the bottom of the skillet.
- Add the beef stock and bring to a simmer. Cook for 10-15 minutes, or until the sauce has reduced by half.
- Remove the skillet from the heat and stir in the butter until melted and smooth.
- Slice the lamb and serve with the rosemary jus.
