Lamb Rack with Rosemary Jus

Ingredients - Serves 4

Let's Get Started

  1. Preheat the oven to 400°F.
  2. Season the rack of lamb with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the lamb and sear on all sides until browned.
  4. Add the garlic and rosemary to the skillet and place in the oven. Roast for 20-25 minutes, or until the lamb reaches your desired level of doneness.
  5. Remove the skillet from the oven and transfer the lamb to a cutting board to rest.
  6. Place the skillet back on the stove over medium heat. Add the red wine and scrape up any browned bits from the bottom of the skillet.
  7. Add the beef stock and bring to a simmer. Cook for 10-15 minutes, or until the sauce has reduced by half.
  8. Remove the skillet from the heat and stir in the butter until melted and smooth.
  9. Slice the lamb and serve with the rosemary jus.
