Lamb Belly Blt
A gourmet twist on the classic BLT, this sandwich features succulent lamb belly, fresh lettuce, and ripe tomatoes.
Ingredients - Serves 4
- Mayonnaise - To taste
- Tomatoes - 2, sliced
- Lettuce - 4 leaves
- Bread - 8 slices
- Thyme - 1 sprig
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Lamb belly - 1 pound
Let's Get Started
- Season the lamb belly with salt and pepper.
- Heat the olive oil in a large pan over medium heat. Add the lamb belly and cook until browned on all sides.
- Add the garlic and thyme to the pan. Cover and cook on low heat for 3 hours, or until the lamb is tender.
- Toast the bread slices.
- Spread mayonnaise on one side of each slice of bread.
- Place a lettuce leaf on four of the bread slices.
- Top the lettuce with slices of lamb belly and tomato.
- Cover with the remaining bread slices, mayonnaise side down.
- Cut the sandwiches in half and serve.
