Ingredients - Serves 4

Let's Get Started

  1. Season the lamb belly with salt and pepper.
  2. Heat the olive oil in a large pan over medium heat. Add the lamb belly and cook until browned on all sides.
  3. Add the garlic and thyme to the pan. Cover and cook on low heat for 3 hours, or until the lamb is tender.
  4. Toast the bread slices.
  5. Spread mayonnaise on one side of each slice of bread.
  6. Place a lettuce leaf on four of the bread slices.
  7. Top the lettuce with slices of lamb belly and tomato.
  8. Cover with the remaining bread slices, mayonnaise side down.
  9. Cut the sandwiches in half and serve.
