Ingredients - Serves 8

Let's Get Started

  1. Preheat the oven to 350°F (175°C). Grease and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the eggs and sugar together until light and fluffy.
  3. Sift in the flour and baking powder, and gently fold into the egg mixture until well combined.
  4. Add the vanilla extract and mix well.
  5. Pour the batter onto the prepared baking sheet and spread it evenly.
  6. Bake for 10-12 minutes, or until the cake is golden and springs back when lightly touched.
  7. Remove the cake from the oven and let it cool for a few minutes.
  8. Place a clean kitchen towel on a flat surface and dust it with powdered sugar.
  9. Carefully invert the cake onto the towel and remove the parchment paper.
  10. While the cake is still warm, roll it up tightly with the towel, starting from one of the shorter ends.
  11. Let the rolled cake cool completely.
  12. Unroll the cake and spread a layer of whipped cream evenly over the surface.
  13. Spread the jam on top of the whipped cream.
  14. Roll the cake back up, this time without the towel.
  15. Dust the rolled cake with powdered sugar.
  16. Slice and serve the kääretorttu chilled. Enjoy!
