Kääretorttu
Kääretorttu, also known as a Finnish rolled cake, is a delicious and versatile dessert. It consists of a light sponge cake filled with various fillings and rolled into a log shape.
Ingredients - Serves 8
- Powdered sugar - For dusting
- Jam (your choice of flavor) - 1/2 cup
- Whipped cream - 1 cup
- Vanilla extract - 1 teaspoon
- Baking powder - 1 teaspoon
- All-purpose flour - 1 cup
- Sugar - 1 cup
- Eggs - 4
Let's Get Started
- Preheat the oven to 350°F (175°C). Grease and line a baking sheet with parchment paper.
- In a mixing bowl, beat the eggs and sugar together until light and fluffy.
- Sift in the flour and baking powder, and gently fold into the egg mixture until well combined.
- Add the vanilla extract and mix well.
- Pour the batter onto the prepared baking sheet and spread it evenly.
- Bake for 10-12 minutes, or until the cake is golden and springs back when lightly touched.
- Remove the cake from the oven and let it cool for a few minutes.
- Place a clean kitchen towel on a flat surface and dust it with powdered sugar.
- Carefully invert the cake onto the towel and remove the parchment paper.
- While the cake is still warm, roll it up tightly with the towel, starting from one of the shorter ends.
- Let the rolled cake cool completely.
- Unroll the cake and spread a layer of whipped cream evenly over the surface.
- Spread the jam on top of the whipped cream.
- Roll the cake back up, this time without the towel.
- Dust the rolled cake with powdered sugar.
- Slice and serve the kääretorttu chilled. Enjoy!
