Let's Get Started

  1. In a blender, grind the soaked cashews into a smooth paste.
  2. Heat ghee in a large pan over medium heat.
  3. Add cumin seeds and let them splutter.
  4. Add chopped onions and sauté until golden brown.
  5. Add minced garlic and grated ginger. Cook for another minute.
  6. Add the chicken pieces and cook until they are lightly browned.
  7. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well.
  8. Reduce the heat to low and add the whisked yogurt. Stir continuously to avoid curdling.
  9. Add the cashew paste and mix well to combine.
  10. Cover the pan and let the chicken cook in the creamy sauce for about 20 minutes, or until tender.
  11. Sprinkle garam masala and garnish with fresh cilantro before serving.
  12. Serve hot with steamed rice or naan bread.
