Koofteh Berenji
Koofteh Berenji is a traditional Persian rice and meatball dish flavored with herbs and spices.
Ingredients - Serves 6
- Water - 4 cups
- Vegetable oil - 2 tablespoons
- Salt and pepper - To taste
- Cinnamon - 1/2 teaspoon
- Turmeric - 1 teaspoon
- Fresh herbs (parsley, cilantro, dill) - 1/2 cup, chopped
- Onion - 1 medium, finely chopped
- Yellow split peas - 1/2 cup
- Ground beef - 1 pound
- Basmati rice - 2 cups
Let's Get Started
- Wash the rice and soak it in water for 1 hour. Drain the rice.
- In a large bowl, combine the ground beef, yellow split peas, chopped onion, fresh herbs, turmeric, cinnamon, salt, and pepper. Mix well.
- Take a small portion of the meat mixture and shape it into a ball. Repeat with the remaining mixture.
- In a large pot, heat the vegetable oil over medium heat. Add the meatballs and cook until browned on all sides.
- Add the drained rice and water to the pot. Bring to a boil, then reduce the heat to low and cover the pot.
- Cook for 40-45 minutes, or until the rice and meatballs are cooked through and tender.
- Serve hot and enjoy!
