Let's Get Started

  1. Place the chicken pieces in a large pot and cover with water. Bring to a boil over high heat.
  2. Reduce the heat to low and simmer for 30 minutes, skimming off any foam that rises to the top.
  3. Add the carrots, celery, and onion to the pot and continue to simmer for another 20 minutes.
  4. Remove the chicken from the pot and let it cool. Once cool, remove the skin and bones and shred the meat.
  5. Return the shredded chicken to the pot and add the rice. Simmer for 10 minutes, or until the rice is cooked.
  6. Stir in the lemon juice and season with salt and pepper.
  7. Serve hot.
