Kotosoupa
Kotosoupa is a traditional Greek chicken soup, known for its comforting and healing properties. It's a simple, yet flavorful dish made with chicken, rice, and vegetables.
Ingredients - Serves 4
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Rice - 1/2 cup
- Onion - 1, chopped
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Water - 8 cups
- Chicken - 1 whole, cut into pieces
Let's Get Started
- Place the chicken pieces in a large pot and cover with water. Bring to a boil over high heat.
- Reduce the heat to low and simmer for 30 minutes, skimming off any foam that rises to the top.
- Add the carrots, celery, and onion to the pot and continue to simmer for another 20 minutes.
- Remove the chicken from the pot and let it cool. Once cool, remove the skin and bones and shred the meat.
- Return the shredded chicken to the pot and add the rice. Simmer for 10 minutes, or until the rice is cooked.
- Stir in the lemon juice and season with salt and pepper.
- Serve hot.
