Vegan Ramen
This vegan ramen is a flavorful and satisfying dish made with plant-based ingredients.
Ingredients - Serves 2
- Sesame seeds - 1 tablespoon
- Nori sheets - 2, torn into small pieces
- Baby spinach - 2 cups
- Green onions - 2, sliced
- Ramen noodles - 8 ounces
- Firm tofu - 8 ounces, cubed
- Shiitake mushrooms - 4 ounces, sliced
- Sesame oil - 1 tablespoon
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Miso paste - 2 tablespoons
- Soy sauce - 2 tablespoons
- Vegetable broth - 4 cups
Let's Get Started
- In a large pot, bring the vegetable broth to a boil.
- Add the soy sauce, miso paste, garlic, ginger, and sesame oil to the pot. Stir well to combine.
- Reduce the heat to low and simmer for 15 minutes to allow the flavors to meld together.
- While the broth is simmering, cook the ramen noodles according to the package instructions. Drain and set aside.
- In a separate pan, heat a little sesame oil over medium heat. Add the sliced shiitake mushrooms and cook until they are tender and slightly browned.
- Add the cubed tofu to the pan with the mushrooms and cook for a few minutes until heated through.
- Divide the cooked ramen noodles between two bowls. Top with the mushroom and tofu mixture.
- Pour the hot broth over the noodles, mushrooms, and tofu.
- Garnish with sliced green onions, baby spinach, torn nori sheets, and sesame seeds.
- Serve hot and enjoy!
