Kofta Tagine with Eggs

Ingredients - Serves 4
- Eggs - 4
- Tomato sauce - 2 cups
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Parsley - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Ground beef - 1 pound
Let's Get Started
- In a large bowl, combine the ground beef, half of the chopped onion, garlic, parsley, cumin, paprika, salt, and pepper. Mix well and form into small meatballs.
- In a tagine or large skillet, heat some oil over medium heat. Add the meatballs and cook until browned on all sides.
- Remove the meatballs from the tagine and set aside. In the same tagine, add the remaining onion and cook until softened.
- Add the tomato sauce to the tagine and bring to a simmer. Return the meatballs to the tagine, cover, and cook for about 30 minutes.
- Crack the eggs over the meatballs and tomato sauce, cover, and cook for another 10 minutes, or until the eggs are cooked to your liking.
- Serve the Kofta Tagine with Eggs hot, garnished with additional parsley if desired.
