Kofta Tagine with Eggs

Ingredients - Serves 4

Let's Get Started

  1. In a large bowl, combine the ground beef, half of the chopped onion, garlic, parsley, cumin, paprika, salt, and pepper. Mix well and form into small meatballs.
  2. In a tagine or large skillet, heat some oil over medium heat. Add the meatballs and cook until browned on all sides.
  3. Remove the meatballs from the tagine and set aside. In the same tagine, add the remaining onion and cook until softened.
  4. Add the tomato sauce to the tagine and bring to a simmer. Return the meatballs to the tagine, cover, and cook for about 30 minutes.
  5. Crack the eggs over the meatballs and tomato sauce, cover, and cook for another 10 minutes, or until the eggs are cooked to your liking.
  6. Serve the Kofta Tagine with Eggs hot, garnished with additional parsley if desired.
