Let's Get Started

  1. In a large bowl, combine the flour, baking powder, and salt.
  2. Cut in the butter until the mixture resembles coarse crumbs.
  3. In a separate bowl, beat the egg and milk together. Gradually add this to the flour mixture and mix until a dough forms.
  4. Knead the dough on a floured surface until smooth and elastic, then cover and let rest for 1 hour.
  5. While the dough is resting, make the syrup. Combine the sugar, water, lemon juice, cinnamon, and ginger in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes. Let cool.
  6. Roll out the dough to a thickness of 1/4 inch. Cut into strips, then braid three strips together to form the koeksisters.
  7. Heat the oil in a deep fryer or large saucepan to 375°F (190°C). Fry the koeksisters until golden brown, then immediately dip in the cooled syrup. Let soak for a minute, then remove and let drain on a wire rack.
