Let's Get Started

  1. In a large saucepan, combine the chopped tomatoes, onion, and garlic.
  2. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 30 minutes, stirring occasionally.
  3. Remove the saucepan from the heat and let the mixture cool slightly.
  4. Using an immersion blender or a regular blender, puree the mixture until smooth.
  5. Return the pureed mixture to the saucepan and add the apple cider vinegar, brown sugar, salt, cinnamon, cloves, allspice, and ginger.
  6. Bring the mixture to a simmer over medium-low heat and cook for an additional 30 minutes, stirring occasionally.
  7. Taste and adjust the seasoning if needed.
  8. Remove the saucepan from the heat and let the ketchup cool completely.
  9. Transfer the homemade ketchup to sterilized jars or bottles and refrigerate until ready to use.
