Kimchi Mac and Cheese
A fusion of Korean and American cuisine, this Kimchi Mac and Cheese is creamy, spicy and absolutely delicious.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon
- Green onions - 2, chopped
- Salt and pepper - To taste
- Kimchi - 1 cup, chopped
- Sharp cheddar cheese - 2 cups, shredded
- Milk - 2 cups
- All-purpose flour - 2 tablespoons
- Butter - 2 tablespoons
- Elbow macaroni - 2 cups
Let's Get Started
- Preheat your oven to 375°F (190°C).
- Cook the macaroni according to the package instructions, then drain and set aside.
- In a large saucepan, melt the butter over medium heat. Stir in the flour to make a roux, cooking for about 1 minute.
- Gradually whisk in the milk, then bring to a simmer. Cook for 2-3 minutes, or until the sauce has thickened.
- Remove the saucepan from the heat, then stir in the cheese until melted. Add the kimchi, salt, and pepper, then fold in the cooked macaroni.
- Transfer the mixture to a baking dish, then bake for 20-25 minutes, or until the top is golden and bubbly.
- Garnish with the chopped green onions and sesame seeds before serving.
